a good pan is hard to find

But this one from Bialetti, maker of the famous espresso makers, has a lot of virtues - among them no PFOA's; "micro-divets" for nonsticking; and not harmed by metal utensils.

    I like the IDEA of cast iron frying pans, but this one is a HECK of a lot easier.
