Neufchâtel cheese


It took me quite a few decades to realize this, but Neufchâtel is the grandparent of cream cheese. The parent is "American Neufchâtel" which was concocted in 1872, when an American dairyman decided to add cream to traditional Neufchâtel. The resulting cheese is softer and has less fat. Thankfully you can still find American Neufchâtel in grocery stores.
